Early Origins: Ice Wisdom of Eastern Courts

The story of ice cream begins in ancient Eastern palaces.

  • China: As early as 2000 BC, people in the Shang Dynasty stored natural ice in underground wells for summer. Later, in the Tang Dynasty (618–907 AD), records describe Sushan, a frozen dessert made with milk, flour, and spices like ambergris. Many historians see this as one of the earliest forms of ice cream. In the Yuan Dynasty, the Mongols improved the recipe into Bing Lao. Afterward, Marco Polo may have carried this idea to Europe.
  • Persia: At the same time, the Persian Empire created Faloodeh, a dessert of rose water, saffron, fruits, and noodles mixed with mountain snow. They also built “Yakhchāl,” underground ice houses, to store snow for summer cooling.

Europe: From Secret Recipe to Public Delight

When ice cream reached Europe, it quickly evolved and spread.

  • The Renaissance: In 16th-century Florence, the Medici court enjoyed gelato. Bernardo Buontalenti, an architect, is said to have created the first cream-based recipe. He is now called the father of Italian ice cream.
  • Technology: In the 17th century, people discovered that mixing salt with ice lowered temperatures quickly. As a result, ice cream could be made even without winter ice. This breakthrough opened the door to larger-scale production.
  • Public Access: In 1660, Francesco Procopio opened Café Procope in Paris, the first café to sell ice cream to the public. From then on, ice cream was no longer only for nobles but also for ordinary citizens.

United States: Mass Production and Innovation

During the 19th and 20th centuries, America turned ice cream into a global favorite.

  • Industrial Production: In 1851, Jacob Fussell built the first ice cream factory in Maryland. His large-scale production made ice cream affordable for everyone.
  • Key Inventions: This period gave birth to many ice cream innovations:
    • Ice Cream Cone: In 1904, at the St. Louis World’s Fair, a vendor ran out of bowls and used a waffle to hold ice cream. The cone was born.
    • Popsicle: In 1905, 11-year-old Frank Epperson left a drink with a stick outside overnight. It froze, creating the first ice pop. He patented it in 1923 as the “Popsicle.”
    • Home Refrigerators: In the early 20th century, refrigerators spread to homes, making it easy to store and make ice cream at home.
